No stranger to the Cornucopia Culinary Stage, Chef Dave Ryan will return to share his unique culinary skillset. Collaborating with Louis-Jérôme Doise, Single Malt Specialist at Whyte & Mackay, one of the world’s leading blended and single malt scotch whisky producers, guests will enjoy a whisky-paired menu, along with engaging discussion and education.


Chef Dave Ryan
Canadian born and raised in Nova Scotia, Chef Dave began his career in 1984 after graduating a from a culinary arts program at NSIT, Nova Scotia. With a variety of ethnic influences throughout his career, along with his own Middle Eastern and Irish heritage, Dave’s cooking style is modern European influenced with Canadian roots. Having become involved in culinary competitions early in his career, Dave sees them as a source of great inspiration for both apprentices and established professionals. "There is more to cooking and creating than our everyday work can offer. We can't re-invent food but I believe we can take that basic function and elevate it to an art". He has certainly proven that with his vast culinary competition achievements. Particularly, Dave is a two-time World Champion and holder of the Olympic "Grand Gold" from the 2000 World Culinary Olympics. Dave has co-hosted a culinary radio program, was involved in the reality TV show "The Next Great Chef", and has contributed to several culinary books.


Louis-Jérôme Doise
Louis is the Single Malt Specialist in Canada for Whyte & Mackay, the company behind the world renowned and distinguished whiskies The Dalmore and Jura. With an accent that is definitely not Scottish, Louis travels coast to coast across Canada spreading the word of these two fine unique Single Malt Distilleries, and what makes them stand out from the rest. With over 10 years of experience in the spirits industry, he’s also an aviation fanatic and will go out of his way to try a new route, a new product or a new plane!
