Tuscany vs Sicily by Andrea Franchetti
Andrea Franchetti works with two very different vineyard projects. Franchetti created his first estate Tenuta di Trinoro from scratch, on rough farm and woodland in the far-flung reaches of southwest Tuscany. Though a significant challenge, this was equalled by his endeavour on the slopes of Mt. Etna, which involved the renaissance of reclaimed formerly abandoned terraces of vines upon Sicily’s live volcano. Chef James Walt’s menu will incorporate elements from both these regions to best present these diverse terroirs.

Nourish: The Nomad Cook presents - Introduction to Terpenes Brunch
Chef Travis Petersen (The Nomad Cook) will be preparing a three-course brunch infused with botanical terpenes. The new frontier in the culinary world, terpenes carry therapeutic effects that not only provide beautiful aromas and new tastes for the palate, but bring a whole new dining experience to the table.


Born and raised in Vancouver, British Columbia, Chef Travis is a West Coast native who has spent years travelling abroad, discovering his passion for food. After relocating to Edmonton in his mid-twenties to pursue a career in oil and gas, Travis apprehensively applied for MasterChef Canada. Though cooking had always been a passion of his, it was never thought to grow past that. After being selected as one of the Top 40 contestants on the popular television show in 2015, things started to evolve and in January 2016, The Nomad Cook was born.


Over the following years the company would mature, travelling coast to coast and building the Nomad Cook brand. Chef Travis was offering a new approach for the artist behind the plate; a platform for chefs to cultivate new opportunities outside the traditional restaurant circuit.


Chef Travis has spent the last few years hosting pop-up dinners and events all over Canada, serving over 2,300 people their first terpene infused dining experience and leading the way for a new movement in Canada.


Chef Travis has a colourful portfolio of clients including celebrities, professional athletes, Dinner in The Sky Vancouver, and countless families coast to coast. Sea to Sky - a tribute to BC's culinary landscape
Edible Canada will present an altitude based lunch contemplating Chef Albert's angle on products ranging from Ocean Wise seafood from the Pacific to vegetables grown in the mountains of our bountiful lands. Expect different techniques and a wide flavour palette as we celebrate BC's cuisine and ingredients at it's finest!


Albert Tran, Chef de Cuisine at Edible Canada. Before deciding to pursue cooking as a career, Albert Tran was learning the ropes at home watching his Mother cook traditional Vietnamese and Chinese cuisine in Ottawa. Cooking has always been a big part of his life, earning his first wages in high school cooking on food trucks and local neighboring Vietnamese restaurants. It seemed only natural then to transition into a professional career in cooking, receiving his diploma in Culinary Management from Algonquin College.


Albert is always inspired by the culinary stories the region has to tell. His experience spans from modern Japanese in Ottawa and Spanish influences in Montreal to contemporary French and regional seafood inspired cuisine on the Marina in Victoria. Most recently Albert has enjoyed working with the freshest local, seasonal and sustainable ingredients of BC’s Coastal Islands at Sonora Resort, a Relais & Chateau Five Star Luxury property. Preparing freshly caught spot prawns, urchin, crab, sturgeon and salmon directly from the ocean outside the kitchen doors gave Albert a new perspective he hopes to continue to be inspired by. He has always had a great love for the discipline of the kitchen, the playfulness of creative plating and the tried and true fundamental techniques.


Albert is enthusiastic and eager to share his passion with Edible Canada and continue to grow. He hopes to bring his knowledge of BC’s sustainable seafood and seasonal farm to table ingredients to the plate.
Albert collaborated with Chef and President & Founder of Edible Canada, Eric Pateman, to create a menu that highlights local producers and ingredients as well as including influences from Eric’s culinary travels. Albert teases that the new menu will be showcasing delicious and approachable yet diverse ingredients; opening minds and mouths to different cultural perspectives and sustainable eating while paying homage to the finest selection of ingredients BC has to offer.


Born in 2006 to promote the Canadian culinary landscape, and the many cultures and artisans involved in it, Edible Canada bistro and retail shop on Granville Island/Vancouver are a reflection of the ideals of President & Founder Eric Pateman.


The seasonal recipes with a local-centric approach are not only tasty but responsibly thought, taking into consideration the whole chain, from the source to the plate.


Our bistro showcases local and seasonal produce with a focus on Wild Canadian Seafood & Game as well as on a plant-based menu. Edible Canada has been driven by the question What is Canadian cuisine? A true champion of Wildebeest’s farm-to-table ethos, McHale takes great pride in collaborating with local farmers, ranchers and providers to oversee the innovative nose-to-tail butchery program at the Gastown hotspot, where dishes are paired with a diverse list of Old- and New-World wines and an award-winning cocktail list. Ian McHale manages the day-to-day back-of-house operations at Wildebeest, fusing his straightforward, old-school approach with contemporary technique. A true champion of Wildebeest’s farm-to-table ethos, he takes great pride in collaborating with local farmers and butchers to run the Gastown hotspot’s innovative nose-to-tail culinary program. Born and raised in Maryland, McHale first developed a passion for hospitality in 2010 while working at Mia Carolina Glyndon, a small mom-and-pop Italian restaurant in his hometown. After culinary school, he relocated across the pond to complete a 16-month stint at the acclaimed five star Merrion Hotel in Dublin, Ireland. He later took on the role of Senior Chef De Partie at the Michelin-starred Chapter One Restaurant where he further honed his skills working in a fast-paced kitchen. His hands-on experience helped him place in the final five at the Euro-Touques Young Chef of the Year Competition, Ireland’s premier culinary contest for talented young chefs under 26.


In May 2016, McHale relocated to Vancouver to take on an ambitious new challenge as Sous Chef at Wildebeest and was soon promoted to Chef De Cuisine before rising to the role of Executive Chef beginning in 2018.

About Chef Daniel Crane
Chef Daniel grew up on Vancouver Island in the small town of Port Hardy, B.C. Surrounded by nature, along with the nearby ocean and its abundance of fresh seafood, the stage was set for Daniel to become a chef who was passionate about sourcing locally.


He started his career from the ground up, first as a dishwasher at 16 years of age, and today has experience working under renowned chefs and contributing to menu development at the The Rocky Mountaineer and a number of respected restaurants across BC. In his current position as Executive Chef at Tyax Lodge, Chef Daniel has taken the opportunity to display his personal vision of cuisine in an inspired and beautiful setting.


Chef Daniel strongly believes in working with farmers and sourcing locally, as much as possible. He believes ingredients should be respected and incorporates a no-waste mentality, which he shares with his kitchen team.

Drink Seminar: Discover Chianti Classico: An Italian Legend
If practice makes perfect, the Italian winemakers behind Chianti Classico must find themselves with a lot of time on their hands. Since Etruscans times vines are cultivated in Tuscany and the wineries in Chianti have been making the eponymous wine since the 14th century, although the character and composition of the blend have changed significantly since then.  Jason Yamasaki, the Chianti Classico Ambassador to BC, will talk about what distinguishes the 8 Chianti Classico municipalities from each other, as well as the differences between Chianti Classico, Riserva, and Gran Selezione (a new category introduced in 2014 that requires all grapes to come from a producer's own estate, and all wines to be approved by a special tasting committee). Guests will taste a range of Chianti Classico wines that illustrate regional differences.

Presenters: Maude Renaud-Brisson & Jenna Briscoe
Napa has played an indelible role in the way North American wine culture is viewed by the rest of the world. The region accounts for only 4% of California’s wine production, however, a wide range of styles and regions in the state remain relatively undiscovered. Maude Renaud-Brisson and Jenna Briscoe host this seminar exploring lesser-known California, including cooler coastal regions such as Sonoma Coast and Carneros as well as arid inland Lodi. Guests will sample wines that illustrate both the established Californian styles made famous by classic producers and the new frontier of winemakers who are experimenting with unusual grape varieties and locales.

Nourish: Wolfgang Sterr
Wolfgang Sterr joined Whistler Blackcomb as Executive Chef in 2011. Born and raised in the Bavarian Alps, Wolfgang has always had an appreciation for the outdoors, and for food. “I am told by my mom that at the age of three, she’d catch me standing in the kitchen of my parents’ hotel peeking into the pots to see what was cooking,” he recalls. He began his apprenticeship at the age of 15 and graduated with his Chef papers at just 18 years old. Combining his two loves for food and snowboarding, Wolfgang worked in Davos, Arosa and Engelberg Switzerland on a quest to expand his culinary knowledge. Over the next four years he was exposed to Italian, French and German cuisine and was able to snowboard 100 days each season.


Coming to Whistler on a Snowboard Vacation in 1991 changed everything. “I fell in love with the country and its people,” he remembers. In a back-and-forth cross-Canada shuffle between the four diamond Sherwood Inn in Muskoka, Ontario, the Fairmont Chateau Whistler, and then back to Ontario’s wine region to follow his dream of opening his own restaurant built on sustainability, local products, energy reduction, great wine and food, Wolfgang gained valuable experience under some of the best in the biz.


Returning to Whistler for a visit in March 2010 made Wolfgang realize that life has more to offer than just work and the mountains called out to him to return. And in a twist of fate whereby one truly recognizes they’re on the right path, his restaurant sold, a job offer came from Whistler Mountain to run the Roundhouse lodge (one of north America’s largest mountain top restaurants), and nine months into the journey, he was promoted to Whistler Blackcomb’s Executive Chef to help lead the massive Food and Beverage division including 17 on and off mountain restaurants.

Chef Stacy Johnston 
Stacy is a Sous Chef for the Ocean Wise Association working out of the Vancouver Aquarium. Born and raised in Saskatchewan, her love for prairie flavours began at a young age on her grandparent’s seed farm. After studying at SAIT Polytechnic she went on to work at the Wascana Country Club where she had the opportunity to compete in the Canadian Culinary Championships in 2015. In 2016 she became the Head Chef at 641 Grill, a farmer owned and locally sourced restaurant. Here she continued to hone her craft and started dreaming about the potential that prairie flavours could have with a more global perspective. In 2018 Stacy relocated to Vancouver to work with Ocean Wise. Here she strives to combine her Saskatchewan heritage with Pacific Northwest flavours to create dishes that comfort and intrigue.


Sonia Strobel, Co-Founder of Skipper Otto
Since 2001, Sonia and the Strobel family have been working on ways to connect their family’s sustainably harvested seafood with local friends and family. In 2008, Sonia and Shaun Strobel, launched Skipper Otto as an alternative business model for selling fresh, locally sourced seafood. "We started Skipper Otto Community Supported Fishery to keep independent small-scale fishing alive in BC, protecting our valuable ocean resources, and ensuring customers have direct access to wild, sustainable BC seafood. We’ve cut out huge swathes of the supply chain providing you with complete transparency around what we are catching, where, and how. We educate consumers around important issues in fisheries, and are rebuilding robust local food systems and communities."

Origo Club Head Chef David Pan is a certified double threat when it comes to both kitchen and cellar, having sharpened his skills on the line at five-star hotels and Michelin-starred restaurants and reinforcing his culinary expertise with an extensive knowledge of fine wine and its food-pairing potential.


Born in Taiwan, Pan came to Vancouver at an early age and began his back-of-house career in high school when he decided to follow his passion by pursuing a culinary arts degree and eventually obtain his certification as a Red Seal Journeyman. He continued sharpening his kitchen skills as a Chef de Partie at Westwood Plateau Golf & Country Club before making stops on the line at Chartwell at the Four Seasons Hotel Vancouver and Market by Jean-Georges in the Shangri-La Hotel.


Armed with his Wine Spirit Education Trust (WSET) level 3 certification and a current diploma candidate, Pan further developed a nuanced palate by segueing into the wine world as a senior wine specialist at Vancouver’s Liberty Wine Merchants. After six years in that role, the kitchen once again called his name and he landed the Chef de Cuisine position at Vancouver’s venerable Bishop’s Restaurant.


At Origo Club, Pan is able to fully indulge his culinary artistry and craftsmanship by showcasing a variety of textures, flavours and ingredients in a menu that pays homage to authentic French fare and allows guests to take part in a truly unparalleled dining experience.

Critic Bill Zacharkiw recently noted that “the time for apologizing for Quebec wine is over.” Although winemaking in the province has a long history – Samuel de Champlain planted vines in 1608, and the early French colony made wine from wild grapes as well – it’s only lately that Quebec winemaking has truly come into its own. Choosing varietals that perform well in similar Northern European climates, and learning how best to vinify the grapes, has been key. Today there are over 130 vignerons in the province, some of which consistently sell out as much as they can produce. Does your teen love to cook?  Cornucopia Junior Chef is back for 2019!  This workshop for kids age 13-18 is dedicated to bringing teens and professionals together to share in the craft of cooking and learning about food, nutrition and healthy living.  Junior chefs will create a meal, prepare food while considering the food system and sustainability and present and share it with others.  
Reinforcing the connection between food, community and health and lead by veteran food educator, high-school teacher Jason Dabbagh, this program is designed as a sneak peek into the culinary arts, with fun and learning at its core.  Set in Aava Hotel's CABN, Cornucopia Junior Chef turns up the heat while experiencing working in one of Whistler’s top-notch professional kitchens.
About Jason Dabbagh
Jason Dabbagh is a passionate food educator that believes in the abilities of young people. He has created a new program at Bellerose Composite High School in St. Albert that prepares students for the food and beverage industry. 
At his core, he feels developing core culinary competencies will directly impact people's eating habits and their appreciation for the process of creating meals for people they love. Prior to beginning his carrier in education, Jason spent his 20's in the food and beverage industry. He has a passion for hospitality and believes in the connection between food and community.

Chef Table Luncheon: Chef Rich Francis from The Red Chef Revival
Chef Rich Francis is the chef/owner of The Seventh Fire Hospitality Group that has won honors for his approach to First Nations foods and pre-colonial indigenous ingredients that revitalize food and culture.
Born in Yellowknife North West Territories, Canada, Rich’s mother is Haudenosaunee from the Six Nations of Ontario, Canada, and his father is Tetlit Gwich’in from Fort McPherson, NWT. From those roots, Rich has climbed the ladder from the acclaimed Stratford Chefs School in Stratford, Ontario finishing at the top of class and receiving the institute’s award for culinary excellence in 2008 to being one of the Finalists and only First Nations competitor on Season 4 of Top Chef Canada.


Rich, is the co-producer and co-creator for a new ground-breaking documentary called Red Chef Revival which is a unique travel and food series that will follow Rich Francis on a cross country journey to redefine indigenous cuisine, create a better understanding of pre-colonial Indigenous food systems, and address truth and reconciliation through indigenous foods and the impact of colonization.


He’s is the co-creator of a docu-series for APTN called Wild Game, currently in production.


Through his work as a chef he has addressed issues that affect First Nation as a whole such as truth and reconciliation, colonization, diabetes, obesity, Indigenous food sovereignty and food security to name a few.
His restaurant, a first of its kind destination, The Seventh Fire is slated to open spring of winter 2019 just in time for the launch of his first cookbook Closing the Gap; Truth and Reconciliation Through Indigenous Foods.
He resides in Six Nations, Ontario with his three children.

Chef Dave Ryan
Canadian born and raised in Nova Scotia, Chef Dave began his career in 1984 after graduating a from a culinary arts program at NSIT, Nova Scotia. With a variety of ethnic influences throughout his career, along with his own Middle Eastern and Irish heritage, Dave’s cooking style is modern European influenced with Canadian roots. Having become involved in culinary competitions early in his career, Dave sees them as a source of great inspiration for both apprentices and established professionals. "There is more to cooking and creating than our everyday work can offer. We can't re-invent food but I believe we can take that basic function and elevate it to an art". He has certainly proven that with his vast culinary competition achievements. Particularly, Dave is a two-time World Champion and holder of the Olympic "Grand Gold" from the 2000 World Culinary Olympics. Dave has co-hosted a culinary radio program, was involved in the reality TV show "The Next Great Chef", and has contributed to several culinary books.


Louis-Jérôme Doise
Louis is the Single Malt Specialist in Canada for Whyte & Mackay, the company behind the world renowned and distinguished whiskies The Dalmore and Jura. With an accent that is definitely not Scottish, Louis travels coast to coast across Canada spreading the word of these two fine unique Single Malt Distilleries, and what makes them stand out from the rest. Oregon’s Willamette Valley is not exactly a newcomer to the wine world – vines were first planted there in the 1960s – but its reputation for growing first-class Chardonnays and Pinot Noirs is nonetheless surprising, given that many of its rival producers have been in operation for centuries. The region is blessed with an ideal climate, winemakers devoted to their craft, and, last but not least, good dirt. Bree Stock MW leads this comparative tasting of Chards and Pinots from a range of Willamette AVAs, focusing on how vineyard soil composition affects the complexity of flavours in the glass.
